Creamy Tortellini and Sausage Soup Recipe

Ingredients:

1 pound Italian sausage, browned and drained

1 onion, sliced

2 garlic cloves, minced

1 can (28 ounces) diced tomatoes

1 packet (9 ounces) cheese-filled tortellini (refrigerated)

4 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup heavy cream

2 cups fresh spinach, coarsely chopped

Grated Parmesan cheese, for garnish

Instructions:

Step 1: Prepare the Soup Base

In a slow cooker, combine the browned Italian sausage, sliced onion, minced garlic, and diced tomatoes.

Pour in the vegetable broth and season with dried basil, oregano, salt, and pepper. Stir to combine.

Cover and cook on low heat for 6-7 hours or on high heat for 3-4 hours.

Step 2: Add Tortellini and Spinach

About 30 minutes before serving, add the cheese tortellini and chopped spinach to the slow cooker.

Stir in the heavy cream until fully incorporated.

Cover and continue cooking on high heat for an additional 25-30 minutes, or until the tortellini is tender.
