Hearty and Irresistible Potato Soup Recipe

This thick, creamy soup is bursting with rich flavors, making it the perfect dish for cozy nights. Topped with crispy bacon, tangy sour cream, and savory Parmesan cheese, each spoonful is truly irresistible!

Ingredients

For the Soup:

6 medium potatoes, peeled and diced
6 slices of bacon, chopped
1 small onion, finely chopped
3 cloves of garlic, minced
4 cups of chicken broth
1 cup of whole milk
1 cup of heavy cream
1 cup of grated Parmesan cheese
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
1/2 tsp smoked paprika (optional)

For Garnishing:

1/2 cup sour cream
Chopped green onions or parsley
Extra grated Parmesan cheese (optional)

Instructions

1. Prepare the Bacon
In a large pot, cook the bacon over medium heat until crispy (5–7 minutes).
Remove the bacon with a slotted spoon and set aside, leaving some bacon drippings in the pot.
2. Sauté the Vegetables
Add the chopped onion to the pot and sauté for 3–4 minutes until soft.
Stir in the garlic and cook for another minute until fragrant.
3. Cook the Potatoes
Add the diced potatoes and chicken broth to the pot.
Bring the mixture to a boil, then reduce the heat and simmer for 15–20 minutes, or until the potatoes are tender.
4. Add Cream and Cheese
Once the potatoes are soft, stir in the milk, heavy cream, and Parmesan cheese.
Simmer for 5 minutes, stirring occasionally, until the cheese melts and the soup becomes creamy.
Season with salt, pepper, and smoked paprika (if using).
5. Blend (Optional)
For a thicker consistency, use an immersion blender to partially blend the soup directly in the pot. Alternatively, blend 1–2 cups of soup in a blender and return it to the pot.
6. Serve and Garnish
Ladle the soup into bowls.
Top with a dollop of sour cream, crispy bacon, and chopped green onions or parsley.
Sprinkle extra Parmesan cheese for added flavor, if desired.
