Slow Cooker Cheesy Burger Soup Recipe

If you’re like me, there’s nothing more comforting than a hearty bowl of soup. Curling up with a bowl of warm, cheesy soup, a cozy blanket, and your favorite book or show is the ultimate way to unwind. Ingredients:
1/2 white onion, diced
2 teaspoons garlic, freshly minced
1 can (14.5 ounces) diced tomatoes (do not drain)
2 tablespoons Worcestershire sauce
1 1/2 pounds lean ground beef
2 tablespoons pickle relish
3 cups beef broth
2 teaspoons yellow mustard
8 ounces bacon, cooked and crumbled
1 cup heavy cream
8 ounces frozen Southern-style hash browns
1 1/2 cups Cheddar cheese, freshly shredded
Salt and pepper, to taste

Directions:

Cook the Beef and Vegetables:

In a large skillet over medium heat, crumble and cook the ground beef with the frozen hash browns and diced onion until the beef is browned and cooked through.
Drain any excess fat from the skillet.
Add the minced garlic to the skillet and sauté until fragrant (about 1 minute). Remove from heat.

Transfer to Slow Cooker:

Spoon the cooked beef mixture into your slow cooker.
Add the diced tomatoes (with juice), mustard, pickle relish, and Worcestershire sauce. Stir to combine.
Season with salt and pepper, then stir again.
Pour in the beef broth and stir once more.
Cook:

Cover the slow cooker and set it to high for 3 hours, or low for 6 hours.

Add Cheese and Cream:

After the initial cooking time, remove the lid and stir in the shredded Cheddar cheese and heavy cream.
Replace the lid and continue cooking on high for an additional hour.

Finish and Serve:

Stir in the crumbled bacon just before serving.
Ladle the soup into bowls and enjoy this cheesy, burger-inspired comfort food!

Tips:
For a thicker soup, reduce the broth by 1/2 cup or add a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) during the final hour.

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
